These are Japanese eggplants and like other Asian eggplants, Japanese eggplants have thin skins, and a sweet, delicate flavor. They are escorted by a single tomato which also came in from the vegetable patch today. They are awaiting a decision on which delightful eggplant dish they will be used for. Will it be Eggplant Parmesan, Ratatouille, or Babaganoush? We will probably do grilled eggplant, quick and easy!
